Okay everyone.

I want to share with you my all time favourite coconut curry recipe I found online by a wonderful food blogger called Jessica in the Kitchen. Please go check out her blog, she is fantastic!

It’s vegetarian and packs a punch with flavour. It has a smooth consistency with its creaminess from the coconut milk and the richness from all the indian spices. It’s truly wonderful and I know this will become your new favourite!

The dollar store carried 3 ingredients of this recipe that I needed. The chickpeas, diced tomatoes and the coconut milk. The rest of the ingredients, I already had in my kitchen.

I have to tell you, this recipe is addictive. There are no boring flavours in this dish so every bite you take is an explosion of flavour!

The Recipe

At the beginning it can become time consuming as you’re unfamiliar with the steps but it’s such a delicious recipe that you’ll be making this all the time! And then you’ll know how to make it by heart, just like me!

Ingredients you will need:

  • 1 Tbsp Coconut Oil

  • 2 Chopped Yellow onion

  • 3 gloves chopped garlic

  • 1 Can diced tomatoes

  • 1 Can Chickpeas (Can purchase from Dollar Tree)

  • 1 Can Coconut Milk (Can be purchased from Dollarama)

  • 1 tsp Curry Powder

  • 2 tbsp Garam Masala

  • 1/4 tsp Cumin

  • 1 tablespoon flour

  • 1/2 lime

In a large pot, melt 1 tablespoons of coconut oil under medium heat. Then add in 2 chopped medium yellow onions and cook until translucent. Add the garlic.

Add in your 1 can of diced tomatoes and 1 can of chickpeas and cook down for about 10 minutes under medium-high heat. Cover with lid while mixing occasionally.

Next add in all your spices, starting with 2 tablespoons garam masala, then 1 teaspoon curry powder and lastly 1/4 teaspoon of cumin. Mix until combined.

Lower heat and mix in 1 can of coconut milk. Let cook for another 10-20 minutes under low to medium heat.

If you prefer a thicker sauce, add in 1 tablespoon of flour to help thicken the curry.

Squeeze in half a small lime.

Serve with basmati rice.
