Dollar Store Version Pancake Macaroons
Today we’re making macaroons…with pancake mix I picked up from Dollar Tree!
REAL macaroons are more complicated to make but pancake ones are so EASY. Let’s go with the easy one, shall we?
What you will need:
From Dollar Tree:
Plastic squeeze bottle
Pancake mix
Piping bag and tip
From your own kitchen:
Food dye
Cream cheese
Vanilla extract (available at your local dollar store)
The Recipe: Serves 5
Ingredients:
1 cup pancake mix
3/4 cup water
1/2 cup cream cheese
1/2 cup sugar
1 teaspoon vanilla extract
In a small bowl, empty 1 cup of pancake mix and 3/4 cup of water and mix together. Add your favourite food colour dye and mix until fully blended. *Optional. Separate into two bowls for different colours
Carefully pour your mixture into the plastic squeeze bottles. Clean off any spillage with paper towel.
Heat stove element on medium-high and spray with oil or lightly butter.
Squeeze out mixture about two inches in diameter. Make 20 rounds. This will equal 10 macaroons. Flip pancakes once you see holes form and stay on the surface. Set aside to cool
In a separate bowl, mix together 1/2 cream cheese and 1/2 sugar until smooth. Add in 1 teaspoon vanilla extract and mix until fully blended.
Using a piping bag with tip (or sandwich bag with corner cut off), fill your bag with cream cheese frosting and begin piping on your mini pancake. Place the other pancake on top. Repeat until finished.
